Ingredients

  • 8 ounces Ribeye steak
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Olive oil
  • 1 medium Green bell pepper
  • 1 medium Onion
  • 4 ounces Mushrooms
  • 4 slices Provolone cheese
  • 2 Keto-friendly sandwich rolls
  • 2 tablespoons Mayonnaise

Directions

Step 1

Place the ribeye steak in the freezer for 20 minutes to make it easier to slice thinly.

Step 2

While the steak is chilling, slice the green bell pepper and onion into thin strips and clean and slice the mushrooms.

Step 3

Once the steak is slightly firm, use a sharp knife to slice it as thinly as possible across the grain. Season with salt and black pepper.

Step 4

Heat olive oil in a large skillet over medium-high heat. Add the sliced peppers, onions, and mushrooms. Sauté until the vegetables are soft and the onions are translucent, about 10 minutes. Remove the vegetables from the skillet and set aside.

In the same skillet over high heat, sear the sliced steak in batches to avoid overcrowding, cooking each piece for about 2 minutes per side. Return all of the steak and the vegetables to the skillet and mix well.

Reduce the heat to low and place the provolone slices on top of the steak and vegetable mixture. Cover the skillet and allow the cheese to melt for about 2 minutes.

Meanwhile, preheat your oven to 350°F (175°C) and lightly toast the keto-friendly sandwich rolls for about 5 minutes.

Spread mayonnaise on the bottom half of each toasted roll.

Divide the steak and cheese mixture evenly between the two rolls, placing the mixture on top of the mayo-spread side.
