Ingredients

  • 8 oz Gruyere cheese, shredded
  • 8 oz Emmental cheese, shredded
  • 2 oz Cream cheese
  • 1 large Garlic clove, halved
  • 1 cup Dry white wine
  • 1 tbsp Lemon juice
  • 1 tbsp Cognac or brandy
  • 1 pinch Nutmeg, freshly grated
  • 1 pinch Salt
  • 1 pinch Black pepper, freshly ground
  • 1 tbsp Almond flour

Directions

Step 1

Rub the interior of a fondue pot or a medium saucepan with the cut sides of the garlic halves. Discard the garlic.

Step 2

In a small bowl, toss the shredded Gruyere and Emmental cheeses with almond flour. Set aside.

Step 3

Place the fondue pot or saucepan over medium-low heat. Pour in the dry white wine and lemon juice. Heat until just simmering, but not boiling.

Gradually add the cheese mixture, one handful at a time, stirring constantly with a wooden spoon in a zigzag pattern (not circular) to prevent the cheese from balling up.
