Ingredients

  • 1 cup Unsalted butter, softened
  • 1.5 cups Powdered erythritol or powdered monk fruit sweetener
  • 2 tablespoons Heavy cream
  • 2 teaspoons Vanilla extract
  • 1 pinch Salt

Directions

Step 1

In a large mixing bowl, add the softened unsalted butter. Using a hand mixer or stand mixer with a paddle attachment, beat the butter on medium speed until it becomes creamy and fluffy, about 2-3 minutes.

Step 2

Gradually add the powdered erythritol, 1/2 cup at a time, continuing to beat the mixture on low speed until fully incorporated. Scrape down the sides of the bowl as necessary to ensure even mixing.

Step 3

Once all the erythritol is incorporated, increase the mixer speed to medium-high and beat for another 2 minutes until the mixture is smooth and fluffy.

Step 4

Add the heavy cream, vanilla extract, and a pinch of salt to the bowl. Beat again on medium speed until all the ingredients are well blended, and the frosting reaches your desired consistency and flavor.

Step 5

Taste the frosting and adjust the sweetness to your preference by adding more sweetener if desired.

Step 6

If the frosting is too thick, add an additional tablespoon of heavy cream to achieve a smoother consistency. Conversely, if the frosting is too thin, add more powdered sweetener gradually until the desired thickness is reached.

Step 7

Use immediately to frost cakes or cupcakes, or store in an airtight container in the refrigerator for up to one week.
