Ingredients

  • 3 cups fresh blackberries
  • 0.5 cup granulated erythritol sweetener
  • 2 tablespoons lemon juice
  • 1.5 cups almond flour
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.5 cup unsalted butter
  • 0.25 cup heavy cream
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon ground cinnamon

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

In a medium-sized mixing bowl, combine the blackberries, 1/4 cup erythritol, and lemon juice. Stir gently to coat the berries and let them sit for about 10 minutes to release their juices.

Step 3

In another bowl, mix almond flour, baking powder, remaining 1/4 cup erythritol, and salt.

Step 4

Melt the unsalted butter in a small saucepan over low heat or in the microwave. Let it cool slightly.

Step 5

Add the melted butter, heavy cream, and vanilla extract to the dry ingredients. Stir until you form a thick, dough-like batter.

Step 6

Transfer the blackberry mixture into a lightly greased 8-inch baking dish, spreading it evenly over the bottom.

Step 7

Drop spoonfuls of the cobbler dough over the blackberries, spreading it out to cover most of the berry layer. It’s okay if there are some gaps where berries show through.

Step 8

Sprinkle the ground cinnamon on top of the dough.

Step 9

Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and the berries are bubbling.

Step 10

Allow the cobbler to cool for about 10 minutes before serving. Enjoy it on its own or with a dollop of keto-friendly whipped cream.
