Ingredients

  • 2 cups Almond flour
  • 0.25 cups Coconut flour
  • 0.5 cup Erythritol
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 4 large Eggs
  • 0.5 cup Full-fat Greek yogurt
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Apple cider vinegar
  • 0.5 cup Butter
  • 0.25 cup Sugar-free raspberry jam
  • 0.25 cup Powdered erythritol
  • 1 liter Olive oil, for frying

Directions

Step 1

In a large mixing bowl, combine almond flour, coconut flour, erythritol, baking powder, and salt. Mix well.

Step 2

In a separate bowl, whisk together the eggs, Greek yogurt, vanilla extract, and apple cider vinegar until smooth.

Step 3

Melt the butter in the microwave or on the stovetop, and let it cool slightly. Add it to the wet ingredients and stir until combined.

Step 4

Gradually pour the wet ingredients into the dry ingredients, mixing until the dough is thick and well incorporated.

Step 5

Cover the dough and chill in the refrigerator for about 15 minutes to make it easier to handle.

Step 6

While the dough is chilling, heat the olive oil in a deep fryer or large pot to 350°F (175°C).

Step 7

Once the dough is chilled, use your hands to shape portions of dough into small balls about 2 inches in diameter.

Step 8

Carefully lower the dough balls into the hot oil, frying in batches. Fry each Berliner for 3-4 minutes on each side until golden brown and cooked through.

Step 9

Remove the Berliners from the oil and drain on a paper towel-lined plate.

Step 10

Fill a piping bag with the sugar-free raspberry jam. Use a pastry tip to inject a small amount of jam into the center of each Berliner.

Step 11

Sprinkle powdered erythritol on top of the Berliners for a dusted sugar effect.

Step 12

Serve warm and enjoy your keto-friendly German doughnuts!
