Ingredients

  • 1 pound ground beef
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 1 medium green bell pepper, chopped
  • 3 cloves garlic, minced
  • 14.5 ounces canned diced tomatoes
  • 1 cup beef broth
  • 2 tablespoons tomato paste
  • 2 tablespoons chili powder
  • 1.5 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 1 large avocado, diced
  • 0.25 cup cilantro, chopped
  • 1 whole lime, cut into wedges

Directions

Step 1

In a large pot or Dutch oven, heat the olive oil over medium heat.

Step 2

Add the chopped onion and green bell pepper to the pot. Sauté for about 5 minutes, or until the vegetables are soft.

Step 3

Stir in the minced garlic and cook for another minute until fragrant.

Step 4

Add the ground beef to the pot, breaking it up with a wooden spoon. Cook until the beef is browned, about 8-10 minutes.

Step 5

Drain excess fat if necessary and return the pot to the heat.

Step 6

Stir in the canned diced tomatoes, beef broth, and tomato paste. Mix well to combine.

Step 7

Add the chili powder, ground cumin, smoked paprika, dried oregano, salt, and black pepper to the pot. Stir to incorporate all the spices.

Step 8

Bring the chili to a simmer, then reduce the heat to low. Cover and let it cook for 30 minutes, stirring occasionally.

Step 9

Remove from heat and let it sit for a few minutes to thicken.

Step 10

Serve hot, garnished with diced avocado and chopped cilantro. Add a lime wedge on the side for squeezing over the top.
