Ingredients

  • 800 grams Canned black soybeans
  • 150 grams Bacon
  • 1 medium Onion
  • 2 whole Garlic cloves
  • 2 tablespoons Tomato paste
  • 1 tablespoon Apple cider vinegar
  • 2 tablespoons Sugar-free maple syrup
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Open the cans of black soybeans, rinse them under cold water, and drain well. Set aside.

Step 3

Chop the bacon into small pieces. Finely dice the onion and mince the garlic cloves.

Step 4

In a large oven-safe skillet or Dutch oven, cook the bacon over medium heat until it's crispy, about 5 minutes.

Step 5

Add the chopped onion to the skillet and sauté until translucent, about 3-4 minutes.

Step 6

Add the minced garlic and cook for an additional 1 minute until fragrant.

Step 7

Stir in the tomato paste, and cook for 2 minutes while stirring constantly to allow the paste to blend with the bacon and onions.

Step 8

Pour in the apple cider vinegar, sugar-free maple syrup, Worcestershire sauce, and Dijon mustard, stirring well to combine.

Step 9

Add the drained black soybeans and season with smoked paprika, salt, and black pepper.

Step 10

Mix everything together thoroughly, ensuring the soybeans are well coated with the sauce.

Step 11

Transfer the skillet to the preheated oven and bake for 30 minutes until the beans are tender and the sauce is bubbly.

Step 12

Remove from the oven, let cool for a few minutes, and then serve warm.
