Ingredients

  • 3 large Eggs
  • 2 tablespoons Cream Cheese
  • 4 strips Bacon
  • 2 slices Cheddar Cheese
  • 0.25 teaspoon Baking Powder
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Cream of Tartar
  • 1 tablespoon Butter

Directions

Step 1

Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.

Step 2

In a medium bowl, separate the egg whites from 2 of the eggs and add the yolks to a large bowl. Reserve the whites.

Step 3

To the yolks, add the cream cheese, baking powder, and salt. Mix until smooth and set aside.

Step 4

In another bowl, beat the reserved egg whites and cream of tartar using a hand mixer until stiff peaks form.

Step 5

Gently fold the egg whites into the yolk mixture, being careful not to deflate the whites.

Spoon the mixture onto the prepared baking sheet to form four even circles, resembling buns.

Bake the cloud bread in the preheated oven for about 15-17 minutes or until golden brown.

Meanwhile, cook the bacon in a skillet over medium heat until crispy. Transfer to a paper towel-lined plate.

In the same skillet, melt the butter and fry the remaining egg until cooked to your desired doneness.

Assemble the sandwich by placing a slice of cheddar cheese on one cloud bread, followed by the bacon slices, the fried egg, another slice of cheese, and finally, top with another cloud bread.

Repeat for the second sandwich. Serve immediately.
