Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
Separate the egg whites and yolks of the eggs. Place the egg whites in a large mixing bowl and the yolks in a smaller bowl.
Add cream of tartar to the egg whites and beat them using an electric mixer until stiff peaks form.
In the bowl with the egg yolks, add the cream cheese and mix until well combined and smooth.
Gently fold the egg yolk mixture into the beaten egg whites until combined, taking care not to deflate the mixture.
Spoon the mixture onto the prepared baking sheet, making 4 round bread shapes.
Bake in the preheated oven for about 15 minutes or until the cloud bread is golden brown and set.
While the cloud bread is baking, cook the bacon in a skillet over medium heat until crispy. Remove and drain on paper towels.
In the same skillet, heat the tablespoon of butter over medium heat. Crack the eggs into the skillet, season with salt and black pepper, and cook until the whites are set but the yolks are still runny, about 3-4 minutes.
Remove the cloud bread from the oven and allow to cool slightly.
Assemble the sandwich by placing a slice of cloud bread on a plate, layering with 2 slices of bacon, an egg, a sprinkle of mozzarella cheese, another egg, the remaining bacon, and topping with the second slice of cloud bread.
