  • 170 grams Mozzarella cheese, shredded
  • 85 grams Cream cheese, softened
  • 130 grams Almond flour
  • 30 grams Coconut flour
  • 10 grams Baking powder
  • 50 grams Granulated erythritol or sweetener of choice
  • 2 units Eggs, large
  • 5 ml Vanilla extract
  • 10 grams Ground cinnamon
  • 60 grams Unsalted butter, melted
  • 100 grams Additional cream cheese for frosting
  • 30 grams Powdered erythritol
  • 30 ml Heavy cream

Directions

Step 1

Preheat the oven to 375°F (190°C). Line an 8-inch round baking dish with parchment paper or grease well.

Step 2

In a microwave-safe bowl, combine the mozzarella cheese and 85 grams of softened cream cheese. Microwave in 30-second intervals, stirring in between, until smooth and combined.

Step 3

In a large mixing bowl, whisk together almond flour, coconut flour, and baking powder.

Step 4

Add the melted cheese mixture to the bowl with the dry ingredients. Mix in eggs and vanilla extract. Stir until a dough forms.

Step 5

Turn the dough out onto a piece of parchment paper and knead a few times until smooth. Roll it out to a rectangle approximately 10x12 inches.
