Ingredients

  • 3 medium-sized Zucchini
  • 1 teaspoon Unsweetened apple extract
  • 2 teaspoons Ground cinnamon
  • 1 tablespoon Lemon juice
  • 1 cup Water
  • 1 tablespoon Erythritol sweetener
  • 0.25 teaspoon Salt

Directions

Step 1

Wash the zucchinis thoroughly and peel them using a vegetable peeler.

Step 2

Cut the peeled zucchinis into medium-sized cubes.

Step 3

In a medium saucepan, combine the diced zucchini, water, and lemon juice over medium-high heat.

Step 4

Bring the mixture to a boil, then lower the heat to medium-low. Cover and let it simmer for 20 minutes, stirring occasionally until the zucchini is very soft.

Step 5

Remove the saucepan from heat. Use an immersion blender to puree the mixture until it reaches a smooth consistency. If you don't have an immersion blender, you can transfer the cooked mixture to a regular blender or food processor.

Once pureed, return the mixture to the saucepan if necessary, then stir in the erythritol sweetener, ground cinnamon, unsweetened apple extract, and salt.
