Ingredients

  • 1 Medium ripe avocado
  • 1 cup Fresh cilantro leaves
  • 2 tablespoons Lime juice
  • 0.25 cup Olive oil
  • 1 tablespoon Apple cider vinegar
  • 2 Garlic cloves
  • 0.5 Jalapeño pepper, seeded and chopped
  • 0.25 cup Water
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Cut the avocado in half, remove the pit, and scoop the flesh into a blender or food processor.

Step 2

Add the fresh cilantro leaves, lime juice, olive oil, apple cider vinegar, garlic cloves, and chopped jalapeño pepper to the blender.

Step 3

Pour in the water to thin the dressing to your desired consistency.

Step 4

Season with salt and black pepper.

Step 5

Blend on high until the mixture is smooth and creamy. If the dressing is too thick, add more water, one tablespoon at a time, until you reach your desired consistency.

Step 6

Taste and adjust the seasoning if necessary.

Step 7

Transfer the dressing to a jar or airtight container and refrigerate for up to one week.

Step 8

Serve this versatile dressing over salads, as a dip for veggies, or as a sauce for grilled meats.
