Ingredients

  • 1 cup Almond flour
  • 2 tablespoons Coconut flour
  • 0.5 teaspoon Xanthan gum
  • 2 tablespoons Granulated erythritol
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 0.5 cup Butter
  • 1 cup Water
  • 4 pieces Large eggs
  • 1 teaspoon Vanilla extract
  • 0.25 cup Pearl sugar substitute

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

In a medium saucepan, combine the butter and water. Place over medium heat and bring to a boil.

Step 3

Once the mixture is boiling, remove from heat and immediately add the almond flour, coconut flour, xanthan gum, erythritol, baking powder, and salt. Stir vigorously with a wooden spoon until the mixture forms a thick dough and pulls away from the sides of the pot.

Transfer the dough into a mixing bowl and let it cool for about 5 minutes.

Add the eggs one at a time to the cooled dough, mixing thoroughly after each addition until the dough is smooth and glossy. You can use an electric mixer for this step.
