Ingredients

  • 4 large eggs
  • 2 tablespoons heavy cream
  • 100 grams chorizo
  • 1 cup baby spinach
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil or butter
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh cilantro

Directions

Step 1

In a medium bowl, crack the eggs and add the heavy cream, salt, and black pepper. Whisk together until the mixture is fully blended and slightly frothy.

Step 2

In a non-stick skillet, over medium heat, add half of the olive oil or butter and allow it to melt.

Step 3

Add the chorizo to the skillet, breaking it apart with a spoon, and cook until it is browned and cooked through, about 5 minutes.

Remove the chorizo from the skillet and set aside in a small bowl.

Reduce heat to medium-low, and in the same skillet, add the remaining olive oil or butter, then add the egg mixture.
