Ingredients

  • 8 oz Chorizo sausage
  • 1 large Avocado
  • 4 small Low-carb tortillas
  • 1 cup Cheddar cheese
  • 1 cup Cherry tomatoes
  • 1 cup Romaine lettuce
  • 0.5 cup Sour cream
  • 1 tbsp Olive oil
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 0.25 cup Cilantro
  • 1 Lime

Directions

Step 1

Preheat a skillet over medium heat and add the olive oil.

Remove the casing from the chorizo sausage and add it to the skillet.

Step 3

Cook the chorizo, breaking it apart with a spatula, until fully browned and cooked through, about 7-10 minutes.

Step 4

While the chorizo cooks, halve, pit, and scoop out the avocado flesh into a bowl.

Mash the avocado with a fork and season with salt and pepper, and a squeeze of lime juice.
