Ingredients

  • 500 grams Cauliflower florets
  • 3 tablespoons Olive oil
  • 1 medium Onion, finely chopped
  • 2 medium Tomatoes, pureed
  • 1 tablespoon Ginger garlic paste
  • 2 pieces Green chillies, slit
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Red chili powder
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Coriander powder
  • 1 teaspoon Garam masala
  • 1 teaspoon Kasuri methi (dried fenugreek leaves)
  • 1 teaspoon Salt
  • 2 tablespoons Fresh coriander leaves, chopped

Directions

Step 1

Preheat your oven to 200°C (392°F).

Step 2

Spread the cauliflower florets on a baking sheet and drizzle with 1 tablespoon of olive oil, a pinch of salt, and some turmeric powder. Toss to coat.

Roast in the preheated oven for 20 minutes or until the cauliflower is golden and tender.

In a large pan, heat the remaining olive oil over medium heat.

Add cumin seeds and allow them to splutter.

Add the onions and sauté until they are golden brown.

Stir in the ginger garlic paste and green chillies, cook for another minute until the raw smell disappears.
