Ingredients

  • 2 cups Almond flour
  • 0.25 cups Coconut flour
  • 2 tablespoons Psyllium husk powder
  • 2 teaspoons Xanthan gum
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 0.5 cups Unsalted butter
  • 3 large Eggs
  • 0.25 cups Heavy cream
  • 0.5 cups Sugar-free dark chocolate chips
  • 1 large Egg (for egg wash)
  • 1 tablespoon Water (for egg wash)

Directions

Step 1

Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together almond flour, coconut flour, psyllium husk powder, xanthan gum, baking powder, and salt.

Step 3

Cut the unsalted butter into small cubes and incorporate it into the dry ingredients using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Step 4

In a separate bowl, whisk together 3 large eggs and heavy cream. Pour the wet mixture into the dry ingredients and mix until a dough forms.

Step 5

Wrap the dough in plastic wrap and refrigerate for at least 30 minutes. This makes the dough easier to handle and less sticky.

Step 6

Once chilled, roll the dough between two sheets of parchment paper into a rectangle roughly 0.25 inch thick.

Step 7

Cut the dough into 8 triangles. Place a few sugar-free dark chocolate chips at the wider end of each triangle.

Step 8

Carefully roll each triangle from the wide end to the narrow tip, forming a croissant shape. Place the croissants on the prepared baking sheet.

Step 9

In a small bowl, beat together 1 large egg and 1 tablespoon of water to create an egg wash. Brush this mixture over the tops of the croissants.

Step 10

Bake in the preheated oven for about 20 minutes, or until the croissants are golden brown and firm to the touch.

Step 11

Let cool slightly before serving. Enjoy your keto-friendly chocolate croissants warm.
