Ingredients

  • 1.5 cups almond flour
  • 2 tablespoons coconut flour
  • 0.5 cup unsalted butter, softened
  • 0.5 cup erythritol
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt
  • 1 cup sugar-free chocolate chips
  • 2 tablespoons coconut oil

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a mixing bowl, combine the almond flour, coconut flour, baking powder, and salt. Stir until well mixed.

Step 3

In another bowl, cream together the softened butter and erythritol until the mixture is light and fluffy.

Add in the egg and vanilla extract to the butter mixture. Beat until thoroughly combined.

Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
