Ingredients

  • 1.5 cups unsweetened shredded coconut
  • 0.25 cup coconut flour
  • 0.25 cup erythritol sweetener
  • 0.5 cup unsweetened coconut milk
  • 0.25 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 100 grams dark chocolate (85% cocoa or higher)
  • 0.25 teaspoon sea salt

Directions

Step 1

Line an 8x8 inch baking pan with parchment paper, ensuring some paper overhangs the sides for easy lifting later.

Step 2

In a large mixing bowl, combine the shredded coconut, coconut flour, and erythritol sweetener.

Step 3

In a separate bowl, mix together the coconut milk, melted coconut oil, and vanilla extract until well combined.

Step 4

Pour the wet ingredients into the dry ingredients and mix until a thick, sticky dough forms.

Step 5

Press the coconut mixture evenly into the prepared baking pan, pressing firmly to ensure it holds together.

Step 6

Place the pan in the refrigerator for 30 minutes to allow the mixture to set.

Step 7

Once set, melt the dark chocolate in a microwave-safe bowl in 30-second increments, stirring after each, until smooth.

Step 8

Pour the melted chocolate over the coconut base and spread it evenly with a spatula.

Step 9

Lightly sprinkle the top with sea salt.

Step 10

Refrigerate the bars for at least 1 hour, or until the chocolate is firm.

Step 11

Once firm, lift the bars out of the pan using the parchment overhang and cut into 12 evenly-sized pieces.

Step 12

Store in an airtight container in the refrigerator for up to a week.
