Ingredients

  • 1 cup Unsweetened shredded coconut
  • 0.5 cup Almond flour
  • 0.25 cup Coconut oil
  • 0.25 cup Cocoa powder
  • 0.25 cup Erythritol sweetener
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Sea salt
  • 2 tablespoons Unsweetened almond milk

Directions

Step 1

In a large bowl, combine unsweetened shredded coconut and almond flour.

Step 2

In a microwave-safe bowl, melt the coconut oil until liquid.

Step 3

Add cocoa powder, erythritol sweetener, vanilla extract, and sea salt to the melted coconut oil. Stir until well combined.

Step 4

Pour the coconut oil mixture into the bowl with the coconut and almond flour.

Step 5

Add unsweetened almond milk and mix everything thoroughly until a consistent dough forms. The mixture should be sticky enough to hold together; if it's too dry, add a bit more almond milk, one teaspoon at a time.

Step 6

Using a tablespoon-sized scoop, form the mixture into small balls by rolling them between your palms.

Step 7

Place each ball onto a baking sheet lined with parchment paper.

Step 8

Refrigerate the chocolate coconut balls for at least 30 minutes or until they are firm.

Step 9

Serve chilled and store any leftovers in an airtight container in the fridge.
