Ingredients

  • 180 grams Almond flour
  • 30 grams Coconut flour
  • 2 large Eggs
  • 100 grams Unsalted butter
  • 120 grams Cream cheese
  • 1 teaspoon Baking powder
  • 1 teaspoon Xanthan gum
  • 50 grams Erythritol sweetener
  • 1 teaspoon Vanilla extract
  • 100 grams Dark chocolate (sugar-free)
  • 50 grams Sliced almonds
  • 1 teaspoon Almond extract
  • 0.5 teaspoon Salt

Directions

Step 1

Preheat the oven to 180°C (355°F). Line a baking sheet with parchment paper.

Step 2

In a microwave-safe bowl, combine the butter and cream cheese. Microwave on medium power for 30-second intervals until both are melted and smooth when stirred.

Step 3

In a large mixing bowl, whisk together the almond flour, coconut flour, baking powder, xanthan gum, erythritol sweetener, and salt.

Add the melted butter and cream cheese mixture, eggs, vanilla extract, and almond extract to the dry ingredients. Mix until a dough forms, it should be slightly sticky.

Place the dough on a sheet of parchment paper, cover with another sheet, and roll out into a rectangle about 1/4 inch thick.
