Ingredients

  • 1 teaspoon Banana extract
  • 2 tablespoons Coconut oil
  • 3 tablespoons Unsweetened cocoa powder
  • 2 tablespoons Erythritol or monk fruit sweetener
  • 0.5 cup Unsweetened shredded coconut
  • 0.25 cup Chopped nuts (optional)
  • 1 tablespoon Coconut cream
  • 0.5 teaspoon Vanilla extract

Directions

Step 1

Line a baking sheet with parchment paper and set aside.

Step 2

In a medium microwave-safe bowl, combine coconut oil and cocoa powder. Microwave in 15-second intervals, stirring in between, until the coconut oil is completely melted and the mixture is smooth.

Step 3

Stir in the erythritol (or monk fruit sweetener) until fully dissolved. Add the banana extract, vanilla extract, and coconut cream to the mixture and stir well.

Step 4

Take a teaspoon-full of the chocolate mixture and drop it onto the prepared baking sheet, spreading slightly to form small chocolate discs.

Step 5

Sprinkle shredded coconut and chopped nuts (if using) on top of each chocolate disc.

Step 6

Place the baking sheet in the refrigerator or freezer until the chocolate is set, about 15 minutes.

Step 7

Serve immediately or store in an airtight container in the refrigerator for up to a week.
