Ingredients

  • 1 pound ground beef
  • 2 tablespoons olive oil
  • 1 teaspoon chipotle powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 6 cups romaine lettuce
  • 1 cup cherry tomatoes
  • 1 large avocado
  • 1 cup cheddar cheese, shredded
  • 0.5 cup sour cream
  • 2 tablespoons lime juice
  • 0.25 cup cilantro, chopped
  • 1 medium jalapeño, seeded and finely diced

Directions

Step 1

In a large skillet over medium heat, add the olive oil and heat until shimmering.

Step 2

Add the ground beef to the skillet and cook, breaking it up with a spoon, until browned, about 5 minutes.

Step 3

Drain excess grease if necessary, then add the chipotle powder, cumin, garlic powder, onion powder, salt, and black pepper. Stir to combine and cook for an additional 2-3 minutes until the spices are well incorporated and aromatic.

Step 4

Remove the skillet from heat and set the seasoned beef aside to cool slightly.

Step 5

Meanwhile, chop the romaine lettuce and halve the cherry tomatoes. Peel, pit, and dice the avocado.

Step 6

In a small bowl, whisk together the sour cream, lime juice, cilantro, and jalapeño to create the chipotle dressing.

Step 7

In a large salad bowl, combine the lettuce, tomatoes, avocado, and shredded cheddar cheese. Add the cooked ground beef on top.

Step 8

Drizzle the chipotle dressing over the salad and gently toss to combine all ingredients.

Step 9

Serve immediately, dividing the salad into 4 portions.
