Ingredients

  • 2 pieces Chicken breast
  • 3 tablespoons Olive oil
  • 1 teaspoon Chipotle powder
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 cups Cauliflower rice
  • 1 medium Red bell pepper
  • 1 large Avocado
  • 1 tablespoon Fresh lime juice
  • 2 tablespoons Cilantro
  • 2 tablespoons Sour cream
  • 1 cup Shredded cheddar cheese

Directions

Step 1

Preheat oven to 400°F (200°C).

Step 2

Rub the chicken breasts with 1 tablespoon of olive oil, chipotle powder, salt, and black pepper.

Step 3

Bake in the preheated oven for 18-20 minutes, or until the chicken is fully cooked and juices run clear. Set aside to rest.
