  • 4 cups cauliflower rice
  • 1 whole avocado, diced
  • 1 cup cherry tomatoes, halved
  • 0.5 cup red onion, finely chopped
  • 0.25 cup cilantro, chopped
  • 0.5 cup sour cream
  • 0.5 cup shredded cheddar cheese

Directions

Step 1

In a bowl, combine the chipotle peppers, lime juice, olive oil, garlic powder, onion powder, cumin, paprika, salt, and black pepper to create a marinade.
