Ingredients

  • 1 pound Boneless, skinless chicken breasts
  • 2 tablespoons Olive oil

  • 4 cups Napa cabbage
  • 1 large Red bell pepper
  • 1 medium Cucumber
  • 3 stalks Green onions
  • 0.5 cup Cilantro
  • 2 tablespoons Soy sauce (or tamari for gluten-free)
  • 2 tablespoons Rice vinegar
  • 1 tablespoon Sesame oil
  • 1 teaspoon Ginger, freshly grated
  • 1 clove Garlic, minced
  • 1 tablespoon Sesame seeds (optional)

Directions

Step 1

Preheat oven to 400°F (200°C).

Step 2

Season the chicken breasts with olive oil, salt, and black pepper on both sides.

Place the chicken on a baking sheet and roast for 20 minutes or until fully cooked. Allow it to rest before slicing thinly.
