Begin by washing and drying the red bell peppers and red chillies. Slice the bell peppers and remove the seeds.
For milder chilli jam, remove the seeds from the chillies. For spicier jam, you can leave them intact.
Roughly chop the peppers and chillies then place them in a food processor.
Add the minced garlic and ginger to the processor. Pulse until finely chopped, but not a puree.
Transfer the chopped mixture to a large pot and pour in the white vinegar and apple cider vinegar.
Stir in the erythritol and salt, and bring the mixture to a boil over medium heat.
Once boiling, reduce the heat to low and let it simmer for 20-25 minutes until the mixture thickens slightly, stirring occasionally.
Taste the mixture and adjust the sweetness or salt according to preference.
Sprinkle the xanthan gum over the mixture while stirring continuously to prevent clumping. Allow it to cook for an additional 5 minutes.
