  • 400 grams canned chopped tomatoes
  • 250 milliliters beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 0.5 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 zucchini
  • 200 grams mushrooms
  • 1 tablespoon chipotle peppers in adobo sauce
  • 2 tablespoons fresh cilantro

Directions

Step 1

Heat the olive oil in a large pot over medium-high heat.

Step 2

Add the chopped onion and bell pepper. Sauté for about 5 minutes until they begin to soften.

Add minced garlic and cook for an additional minute, stirring frequently.

Add the ground beef to the pot. Cook until the beef is browned, breaking it apart with a wooden spoon as it cooks, about 7-10 minutes.
