  • 1 pound Chicken Breasts, boneless and skinless

  • 0.5 teaspoon Black Pepper, freshly ground
  • 1 medium Onion, diced
  • 3 cloves Garlic Cloves, minced
  • 1 teaspoon Cumin
  • 1.5 teaspoons Chili Powder
  • 14.5 ounces Diced Tomatoes, canned
  • 4 cups Chicken Broth
  • 1 medium Bell Pepper, diced
  • 1 small Jalapeño, seeded and minced
  • 2 tablespoons Lime Juice
  • 0.25 cup Cilantro, chopped
  • 1 large Avocado, sliced for serving
  • 0.5 cup Shredded Cheddar Cheese
  • 0.25 cup Sour Cream

Directions

Step 1

Heat olive oil in a large pot over medium heat.

Step 2

Season chicken breasts with salt and black pepper. Add them to the pot and cook until browned, about 7 minutes per side. Remove chicken from the pot and set aside.

In the same pot, add diced onion and sauté until translucent, about 5 minutes.
