Ingredients

  • 1 pound chicken breast
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 medium onion
  • 3 garlic cloves
  • 8 ounces mushrooms
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 4 ounces cream cheese
  • 1 tablespoon Dijon mustard
  • 1 teaspoon paprika
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Dice the chicken breast into bite-sized pieces.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken pieces and cook until browned on all sides, about 5-7 minutes. Remove the chicken from the skillet and set aside.

Step 3

In the same skillet, add the remaining tablespoon of olive oil and butter. Once the butter has melted, add the chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.

Step 4

Add the sliced mushrooms to the skillet and cook for another 5 minutes, or until the mushrooms have softened and browned.
