  • 4 pieces Chicken thighs, boneless and skinless
  • 6 cups Chicken broth
  • 2 tablespoons Butter
  • 1 medium Carrot, diced
  • 2 stalks Celery stalk, diced
  • 2 cloves Garlic, minced
  • 1 medium Onion, diced
  • 1 teaspoon Fresh thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1.5 cups Almond flour
  • 1 teaspoon Xanthan gum
  • 1 large Egg
  • 2 tablespoons Olive oil
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

In a large pot, melt the butter over medium heat. Add the diced onion, carrot, and celery. Sauté for about 5 minutes until the vegetables begin to soften.

Add the minced garlic and continue cooking for an additional 1-2 minutes until fragrant.

Place the chicken thighs into the pot and pour in the chicken broth. Add the fresh thyme, salt, and black pepper.
