Ingredients

  • 500 grams Chicken thighs
  • 2 tablespoons Coconut oil
  • 1 medium Onion, finely chopped
  • 4 cloves Garlic cloves, minced
  • 1 tablespoon Ginger, grated
  • 1 Green chili, sliced
  • 0.5 teaspoon Turmeric powder
  • 1.5 teaspoons Ground coriander
  • 1 teaspoon Cumin powder
  • 1 teaspoon Garam masala
  • 250 milliliters Coconut milk
  • 250 milliliters Water
  • 1 teaspoon Salt
  • 2 tablespoons Fresh cilantro, chopped

Directions

Step 1

Heat coconut oil in a large pan over medium heat.

Step 2

Add the chopped onion and sauté until golden brown, about 5 minutes.

Step 3

Stir in the minced garlic, grated ginger, and sliced green chili, cooking for another minute until fragrant.

Step 4

Add the chicken thighs and cook until they are no longer pink, about 5-7 minutes.

Sprinkle in the turmeric powder, ground coriander, cumin powder, and garam masala. Stir well to coat the chicken with the spices.
