Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 10 oz fresh spinach
  • 2 tbsp ghee or coconut oil
  • 1 medium onion, finely chopped
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, minced
  • 1 cup canned coconut milk, full fat
  • 2 tbsp tomato paste
  • 1 tsp garam masala
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 0.5 tsp turmeric powder
  • 0.25 tsp cayenne pepper
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp lemon juice
  • 2 tbsp fresh cilantro, chopped for garnish

Directions

Step 1

Cut the chicken breasts into bite-sized pieces and set aside.

Step 2

Heat 1 tablespoon of ghee or coconut oil in a large pan over medium heat. Add the finely chopped onion and sauté until they are translucent, about 5 minutes.

Stir in the minced garlic and ginger, cooking for another 2 minutes to release their flavors.

Add the chicken pieces to the pan and cook until lightly browned on all sides, about 6-8 minutes.
