Ingredients

  • 4 pieces Keto tortillas
  • 2 cups Cooked chicken breast
  • 1.5 cups Shredded cheddar cheese
  • 1 medium Bell pepper, thinly sliced
  • 0.5 medium Red onion, thinly sliced
  • 1 medium Avocado, sliced
  • 0.25 cup Fresh cilantro, chopped
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet over medium heat.

Step 2

Add the sliced bell pepper and red onion to the skillet. Sauté until the vegetables are softened, about 5 minutes.

Step 3

Remove the vegetables from the skillet and set them aside.

Step 4

In the same skillet, add the remaining olive oil.

Step 5

Place a keto tortilla in the skillet and sprinkle 3 tablespoons of shredded cheddar cheese over half of the tortilla.

Layer with 1/2 cup of shredded cooked chicken, a portion of the sautéed veggies, and additional 3 tablespoons of cheddar cheese.

Fold the tortilla over to create a half-moon shape, pressing down gently.
