Ingredients

  • 1 lb Boneless skinless chicken breasts
  • 2 tbsp Olive oil
  • 1 medium, chopped Onion
  • 2 chopped Celery stalks
  • 3 minced Garlic cloves
  • 1 medium, peeled and diced Carrot
  • 4 cups Chicken broth
  • 1 cup Heavy cream
  • 4 oz, softened Cream cheese
  • 1 cup Frozen peas
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 tsp Dried thyme
  • 1 tsp Dried basil
  • 1 tsp Xanthan gum

Directions

Step 1

In a large pot or Dutch oven, heat the olive oil over medium heat.

Step 2

Add the chopped onion, celery, and carrot. Cook until onion is translucent and vegetables are softened, about 5 to 7 minutes.

Step 3

Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Step 4

Add the chicken breasts to the pot. Pour in the chicken broth, ensuring the chicken is fully submerged.

Step 5

Bring to a boil, then reduce heat and let simmer for about 15 minutes, or until the chicken is cooked through.

Step 6

Remove the chicken from the pot, shred it using two forks, and return it to the pot.

Step 7

Stir in the heavy cream and softened cream cheese until the cream cheese is fully melted and the soup is smooth.

Step 8

Add the frozen peas, salt, black pepper, thyme, and basil. Mix until everything is well incorporated.

Step 9

Sprinkle the xanthan gum gradually into the soup while constantly stirring for a few minutes until the soup thickens to your desired consistency.

Step 10

Adjust seasoning to taste before serving.

Step 11

Serve hot, garnished with a sprinkle of fresh herbs if desired.
