  • 300 g Cauliflower rice
  • 200 ml Coconut milk

  • 2 tbsp Olive oil
  • 3 cloves Garlic
  • 1 medium Onion
  • 1 tbsp Ginger
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 4 pieces Banana leaves or parchment paper
  • 2 stalks Spring onions

Directions

Step 1

Begin by thinly slicing the chicken breast into bite-sized strips and set aside.

Step 2

Mince the garlic cloves and ginger, and finely chop the onion and spring onions.

Step 3

In a large pan, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic, ginger, and onion, sautéing until the onion becomes translucent.

Add the sliced chicken into the pan, cooking and stirring until it begins to brown.

Step 5

Pour the soy sauce and coconut milk into the pan, stirring to combine.

Allow the chicken to cook through, simmering for about 15 minutes.
