  • 2 tablespoons butter
  • 0.5 cup parmesan cheese
  • 2 cups arugula

Directions

Step 1

Begin by laying each chicken breast between two sheets of plastic wrap or in a resealable plastic bag. Use a meat mallet to gently pound the breasts to an even thickness of about 1/4-inch.

In a small bowl, mix together 1 tablespoon of olive oil, juice of 1/2 lemon, fresh thyme, garlic powder, onion powder, salt, and black pepper.

Rub the prepared mixture over both sides of the chicken breasts, ensuring even coverage. Let the chicken marinate for at least 10 minutes.
