Ingredients

  • 4 pieces Chicken breasts, boneless and skinless
  • 0.5 cup Almond flour
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Butter
  • 8 ounces Mushrooms, sliced
  • 2 cloves Garlic, minced
  • 0.75 cup Marsala wine
  • 0.5 cup Chicken broth
  • 0.5 cup Heavy cream
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Place the chicken breasts on a cutting board and cover with plastic wrap. Gently pound the chicken with a meat mallet or rolling pin until about 1/2 inch thick.

Step 2

In a shallow bowl, mix together the almond flour, salt, and pepper.

Step 3

Dredge each chicken breast in the almond flour mixture, shaking off any excess.

Step 4

Heat the olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.

Add the chicken breasts to the skillet and cook for about 4-5 minutes on each side, or until golden brown and cooked through. Transfer the chicken to a plate and cover with foil to keep warm.
