  • 8 pieces Eggs
  • 0.25 cup Heavy cream
  • 0.5 cup Parmesan cheese, grated
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper, freshly ground
  • 2 tablespoons Olive oil
  • 2 cups Cooked chicken breast, shredded
  • 8 ounces Cream cheese, softened
  • 1.5 cups Mozzarella cheese, shredded
  • 1 cup Marinara sauce, no sugar added
  • 2 tablespoons Fresh basil, chopped

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

In a large mixing bowl, combine the eggs, heavy cream, Parmesan cheese, salt, and black pepper. Whisk until smooth to form the batter for the crepes.

Step 3

Heat a non-stick skillet over medium heat and add a small amount of olive oil. Pour a ladleful of the egg mixture into the skillet and swirl it around to cover the bottom evenly, creating a thin crepe.

Cook the crepe for about 1-2 minutes until the edges start to lift and the bottom is set. Flip and cook for another 30 seconds. Remove from the pan and repeat with the remaining batter. You should have about 8 crepes.
