  • 2 tablespoons Ginger, grated
  • 2 pieces Lemongrass stalks, finely chopped
  • 0.25 cup Olive oil
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Annatto oil (optional, for basting)

Directions

Step 1

In a large bowl, combine coconut vinegar, kalamansi or lime juice, minced garlic, grated ginger, chopped lemongrass, olive oil, paprika, salt, and black pepper. Mix well to create the marinade.

Add the chicken thighs to the marinade and ensure they are well-coated. Cover the bowl and marinate in the refrigerator for at least 2 hours, preferably overnight for more flavor.
