  • 2 cans full-fat coconut milk
  • 4 cups chicken broth
  • 2 tbsp fish sauce
  • 2 tbsp lime juice
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 cups baby spinach
  • 0.25 cup fresh cilantro leaves
  • 2 green onions
  • 4 lime wedges

Directions

Step 1

Chop the chicken thighs into bite-sized pieces. Set aside.

Heat the coconut oil in a large pot over medium heat.

Dice the onion, mince the garlic, and grate the ginger. Add to the pot and sauté until the onion is translucent, about 3-4 minutes.
