Ingredients

  • 1 lb Chicken breast
  • 12 oz Shirataki noodles
  • 1 cup Coconut milk
  • 2 tbsp Coconut oil
  • 3 minced Garlic cloves
  • 1 tsp Ginger
  • 1 diced Red bell pepper
  • 2 tbsp Soy sauce
  • 1 tbsp Lime juice
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp Cilantro

Directions

Step 1

Rinse the shirataki noodles under cold running water for 2-3 minutes to remove any unwanted odor. Drain and set aside.

Step 2

Cut the chicken breast into bite-sized pieces and season with salt and black pepper.

Step 3

In a large pan, heat the coconut oil over medium heat. Add the chicken pieces and cook for 5-7 minutes until they are golden brown and cooked through. Remove the chicken from the pan and set aside.

In the same pan, add the minced garlic and ginger. Sauté for about 1 minute until fragrant.
