Ingredients

  • 2 large Chicken breasts
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 hearts Romaine lettuce
  • 0.5 cup Parmesan cheese
  • 2 tablespoons Lemon juice
  • 1 teaspoon Worcestershire sauce
  • 1 large Garlic clove
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Anchovy paste
  • 1 large Egg yolk
  • 0.5 cup Avocado oil

Directions

Step 1

Preheat a grill or grill pan over medium-high heat.

Step 2

Brush the chicken breasts with 1 tablespoon of olive oil and season with salt and black pepper evenly on both sides.

Step 3

Grill the chicken breasts for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (75°C). Set aside to rest.

While the chicken is cooking, prepare the Caesar dressing. In a small bowl, whisk together lemon juice, Worcestershire sauce, minced garlic, Dijon mustard, and anchovy paste.
