  • 6 pieces Boneless skinless chicken thighs
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 3 tablespoons Olive oil
  • 1 medium Onion
  • 4 cloves Garlic
  • 1 large Bell pepper
  • 8 ounces Mushrooms
  • 2 tablespoons Tomato paste
  • 1 14-ounce can Diced tomatoes
  • 1 cup Chicken broth
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 0.5 teaspoon Red pepper flakes
  • 2 tablespoons Fresh parsley

Directions

Step 1

Season the chicken thighs with salt and pepper on both sides.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken thighs in batches, if necessary, to avoid overcrowding. Cook until browned on both sides, approximately 4-5 minutes per side. Remove the chicken thighs from the skillet and set aside.
