Ingredients

  • 500 grams Boneless chicken thigh, cut into pieces
  • 600 grams Cauliflower rice
  • 100 grams Greek yogurt
  • 2 tablespoons Ghee or coconut oil
  • 1 large Onion, thinly sliced
  • 1 tablespoon Ginger paste
  • 1 tablespoon Garlic paste
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Red chili powder
  • 1 teaspoon Garam masala
  • 0.5 teaspoon Cumin powder
  • 1 piece Cinnamon stick
  • 4 pieces Green cardamom pods
  • 4 pieces Cloves
  • 1 piece Bay leaf
  • 1 teaspoon Salt
  • 2 tablespoons Fresh coriander leaves, chopped
  • 2 tablespoons Fresh mint leaves, chopped
  • 1 tablespoon Lemon juice

Directions

Step 1

In a bowl, marinate the chicken pieces with Greek yogurt, ginger paste, garlic paste, turmeric, red chili powder, garam masala, cumin powder, and salt. Let it sit for at least 15 minutes.

Step 2

Heat ghee or coconut oil in a large pan over medium heat. Add sliced onions and sauté until golden brown.

Step 3

Add cinnamon stick, cardamom pods, cloves, and bay leaf to the pan. Stir for 1-2 minutes until fragrant.

Step 4

Add the marinated chicken to the pan and cook on medium heat until the chicken is fully cooked and the spices are well integrated, about 15 minutes.

Step 5

In another pan, lightly sauté the cauliflower rice in a bit of ghee or coconut oil for about 5-7 minutes, until it's slightly tender.

Step 6

Reduce the heat to low, and layer the cooked cauliflower rice over the chicken in the large pan.

Step 7

Sprinkle fresh coriander, mint leaves, and lemon juice over the top. Cover with a lid and let it steam for 5-7 minutes.

Step 8
