Ingredients

  • 1 pound Boneless skinless chicken breasts
  • 2 cups Broccoli florets
  • 1 large Red bell pepper
  • 1 medium Zucchini
  • 3 tablespoons Soy sauce (or tamari for gluten-free)
  • 2 tablespoons Olive oil
  • 2 minced Garlic cloves
  • 1 teaspoon Ginger
  • 1 teaspoon Sesame oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 sliced Green onions
  • 1 tablespoon Sesame seeds

Directions

Step 1

Slice the chicken breasts into thin strips and season with salt and black pepper.

Step 2

Cut the red bell pepper into thin strips, and slice the zucchini into half-moons. Separate the broccoli into small florets if not already prepared.

Step 3

Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.

Step 4

Add the chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic and ginger, and sauté until fragrant, about 30 seconds.
