Ingredients

  • 1.5 pounds Chicken thighs
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Butter
  • 3 Garlic cloves, minced
  • 1 medium Onion, chopped
  • 8 ounces Cremini mushrooms, sliced
  • 1 cup Heavy cream
  • 2 cups Chicken broth
  • 1 teaspoon Fresh thyme leaves
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Season the chicken thighs with salt and black pepper on both sides.

Step 2

In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the chicken thighs and sear for 4-5 minutes on each side until golden brown. Remove and set aside.

Step 3

In the same pot, reduce the heat to medium and add the butter. Once melted, add the minced garlic and chopped onion. Sauté for about 2 minutes until the onion is translucent.

Add the sliced cremini mushrooms to the pot and cook for about 5 minutes, stirring occasionally, until the mushrooms are browned and have released their moisture.
