Ingredients

  • 1 pound chicken breast
  • 3 cups broccoli florets
  • 2 tablespoons coconut oil
  • 3 tablespoons soy sauce
  • 3 cloves garlic
  • 1 tablespoon ginger
  • 1 teaspoon sesame oil
  • 2 stalks green onions
  • 0.5 teaspoon red pepper flakes
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Begin by preparing the ingredients: Mince the garlic and ginger, and chop the green onions into small pieces.

Step 2

Cut the chicken breast into bite-sized pieces and season with salt and black pepper.

Step 3

Heat a large skillet or wok over medium-high heat and add one tablespoon of coconut oil.

Step 4

Once the oil is hot, add the chicken pieces to the skillet and stir-fry for 5-7 minutes until they are browned and cooked through. Remove the chicken from the skillet and set aside.

Step 5

In the same skillet, add the remaining tablespoon of coconut oil. Add the minced garlic, ginger, and red pepper flakes. Stir-fry for about 30 seconds until fragrant.

Step 6

Add the broccoli florets to the skillet and stir-fry for 4-5 minutes until they begin to soften but still have a bit of crunch.

Step 7

Return the cooked chicken to the skillet with the broccoli, and then add the soy sauce and sesame oil. Stir everything together well to coat the chicken and broccoli with the sauce.

Step 8

Add the chopped green onions and cook for an additional minute.

Step 9

Taste and adjust seasoning if necessary, adding more soy sauce or red pepper flakes according to your preference.

Step 10

Serve the stir-fry hot. It's delicious on its own or can be paired with cauliflower rice for a complete meal.
