Ingredients

  • 1.5 pounds boneless, skinless chicken thighs
  • 3 tablespoons olive oil
  • 3 pieces garlic cloves, minced
  • 1 medium onion, chopped
  • 1 medium red bell pepper, sliced
  • 1 medium green bell pepper, sliced
  • 14 ounces canned diced tomatoes
  • 1.5 cups low-sodium chicken broth
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 2 pieces bay leaves
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 medium zucchini, sliced
  • 1 small head cauliflower, cut into florets

Directions

Step 1

Heat 2 tablespoons of olive oil in a large pot over medium-high heat.

Step 2

Add chicken thighs to the pot and brown on both sides, about 5 minutes per side. Remove chicken and set aside.

Step 3

In the same pot, add the remaining tablespoon of olive oil.

Step 4

Add minced garlic and chopped onions, sautéing until onions are translucent, about 3-4 minutes.
