Ingredients

  • 1 pound Chicken breast
  • 1 cup Pickle juice
  • 1 large Egg
  • 2 tablespoons Heavy cream
  • 1 cup Almond flour
  • 1 cup Parmesan cheese, grated
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup Coconut oil

Directions

Step 1

Cut the chicken breast into bite-sized pieces.

Step 2

Place the chicken pieces in a bowl with the pickle juice. Cover and refrigerate for at least 30 minutes or up to 2 hours to marinate.

In a bowl, whisk together the egg and heavy cream. Set aside.

In another bowl, combine almond flour, grated Parmesan cheese, paprika, garlic powder, onion powder, salt, and black pepper. This will be the breading mixture.
